Evaporated Milk Whipped Topping

This is an unusually good whipped cream substitute.

 

Ingredients:

1 c. evaporated milk

1/4-1/2 c. powdered sugar

Pour evaporated milk into small mixing bowl.  Chill for about 30 minutes.  Beat for 1 minute or until very frothy.  Gradually add sugar and vanilla; continue beating for 2 minutes or until mixture is stiff.  Serve immediately spooned over fresh fruit or your favorite desert.  Makes 3 cups.

    For Topping that holds up to 30 minutes:  Sprinkle 1 teaspoon of gelatin over 2 tablespoons very hot water in small bowl; stir until dissolved.  Add to evaporated milk before chilling.  After whipping, cover and chill for up to 30 minutes.
