Whole Wheat Soda Bread

Ingredients

1 T. vinegar + reconstituted dry milk to make 1 cup

2 1/2 c. whole wheat flour

1 T. dried whole egg, sifted (push thru small sieve)

1 t. baking soda

1/2 t. salt

3 T. honey

Stir milk and vinegar together; let stand about 5

minutes. In large bowl, whisk together dry

ingredients. Stir honey into sour milk. Pour onto

greased cookie sheet and shape with hands into 7-

inch round loaf.

Bake at 375 degrees F for 20 minutes, until golden

brown. Remove from cookie sheet and cool on wire

rack.

Serve warm or cold. Makes 1 loaf.

Optional: Add 2 teaspoons caraway seeds and 1

cup golden raisins to dry ingredients.
